Is fresh fish better than frozen fish? According to a study by the
University of California and the U.S. Department of Commerce, the
answer is not what you may think.
By way of background, fishing industry experts recommend
that for best taste fresh seafood should be cooked within three days of being caught. However, for most
consumers, it is very difficult, if not impossible, to buy fresh fish
caught within this narrow window. The reality is a substantial portion
of the "fresh" fish sold in this country spends long periods of
time in transit on trucks - stretching the definition of "fresh" to the limits.
The University of California study offers this
consumer insight for purchasing high quality seafood: "Frozen seafood
can be superior in quality to fresh products. It might take several
days for the same seafood to make it to your local seafood dealer as "fresh." Nine-day-old "fresh fish" is not uncommon in
supermarkets.
