The reality is a substantial portion of the "fresh" fish sold in this country spends long periods of time in transit on trucks - stretching the definition of "fresh" to the limits.

The University of California study offers this consumer insight for purchasing high quality seafood: "Frozen seafood can be superior in quality to fresh products. It might take several days for the same seafood to make it to your local seafood dealer as "fresh." Nine-day-old "fresh fish" is not uncommon in supermarkets.
