Now that you’ve seen what goes into our process, from catch to processing to packaging. Let’s break down the key differences with what you’ll find at your average grocery store.
1. Wild-Caught vs. Farmed
At Taku, every salmon we offer is wild-caught, never farmed.
Farmed salmon, which dominates the shelves in most supermarkets, is raised in crowded pens and often treated with antibiotics, colorants, and artificial feed. These fish are bred for volume, not quality. In contrast, wild salmon feed naturally, migrate freely, and develop firmer texture and richer flavor thanks to their environment and lifestyle.
2. Quality Selection Standards
Even when wild salmon is available in stores, it’s rarely at the quality grade we process at Taku. Most supermarkets purchase lower-grade fish in bulk from industrial wholesalers, often fish that doesn’t meet the standards required by chefs, premium retailers—or us. We hand-select and process only top-tier fish, caught at peak condition and handled with care from the start.
3. Additives & Shelf Life Manipulation
To extend shelf life and maintain the illusion of “freshness,” much of the supermarket seafood is packaged using preservatives and inert gases like nitrogen. These techniques reduce discoloration caused by oxidation, but they also mask the true quality, and age, of the fish.
We don’t believe in shortcuts. That’s why all of our seafood is vacuum-sealed and flash frozen at peak freshness, no additives or gimmicks.
4. Frozen and Thawed
What you see on the supermarket fish counter isn’t as “fresh” as it looks. Most of that seafood was previously frozen, shipped in from distant suppliers, then thawed to display. Once thawed, it should not be re-frozen—so your window to use it is short, and the texture and flavor have already begun to degrade.
When you buy directly from Taku, you receive seafood that was frozen just hours after it was caught. It has never been thawed, and it’s packaged specifically so you can store it, cook it when you’re ready, and enjoy it at its absolute best.
