Ingredients

- 8 small corn or flour tortillas
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- Salt and pepper to taste
For the Slaw
- 2 cups shredded cabbage (green or purple or both)
- 1/4 cup shredded carrot
- 2 tablespoons mayo
- 1 tablespoon plain Greek yogurt or sour cream
- 1 tablespoon lime juice
- 1 teaspoon honey
- Salt and pepper to taste
Optional Toppings
- Diced avocado
- Fresh cilantro
- Hot sauce or chipotle crema
- Lime wedges
Instructions
- Make the Slaw: In a bowl, combine cabbage, carrot, mayo, yogurt or sour cream, lime juice, honey, and a pinch of salt. Toss well and set aside.
- Season the Shrimp: In a separate bowl, toss shrimp with olive oil, paprika, cumin, salt, and pepper.
- Cook the Shrimp: Heat a skillet over medium-high heat. Add shrimp and cook for 1–2 minutes per side until just cooked through. Remove from heat.
- Warm the Tortillas: Heat tortillas in a dry pan or directly over a low flame until warm and slightly charred.
- Assemble: Fill each tortilla with slaw, a few shrimp, and your favorite toppings. Serve with lime wedges.
