Sablefish (Black Cod)

Sablefish (Anoplopoma fimbria), better known as Black Cod, is not actually a cod at all. It is the only species in its genus, a deep-water fish unique to the North Pacific. They live at depths of 600 to 2,000 feet, sometimes much deeper, in the cold dark water along Alaska's continental slope. Sablefish are extraordinarily long-lived. Some individuals reach 90 years or more, and they grow slowly. That biology is why the Alaska fishery is managed under tight quotas and is considered one of the best-managed deepwater fisheries in the world.

On the Plate

The flesh is unmistakable: ivory white, dense with natural oils, and silky enough that chefs often compare it to butter. Per 100 grams, Sablefish carries nearly twice the Omega-3s of wild King Salmon. The high fat content makes it almost impossible to overcook. It is the fish Nobu Matsuhisa made famous with his miso preparation, and the same fat that rewards a 24 to 72 hour miso marinade also takes well to a slow roast, a quick broil, or a hot pan that crisps the skin.
